Introduction to AI-Based Applications for Nutrition and Health Research (AIRNH) (NUTR-0390)

This brief introductory course is designed to provide an overview of AI-based applications that could be of use in health and nutrition research. We focus on knowledge graphs, conceptual maps, and causal diagrams to provide better understanding and practical skills with the focus on ethical dimensions in using AI-powered tools, the effects of structural missingness on algorithmic bias, data representation and model transparency in the context of nutrition science and policy. Students will gain a general grasp on emerging topics and practical experience in using knowledge graphs, conceptual maps, and causal diagrams critical to analyze nutrition-related data, helping them better understand complex dietary patterns, health outcomes, and relationships in the field of nutrition research.
