Livelihoods, Food Security and Nutrition in Crisis-Prone Contexts (DHP-D249M)

Spring 2026 · DHP D249M · Tufts University · 1.5 credits · Undergraduate

Livelihoods are a strong determinant of food security and poor food security is a strong determinant of poor nutrition, even under-nutrition. Nutrition studies are often limited to the immediate drivers of undernutrition, ignoring the larger, more systemic factors. This class will examine how livelihoods function within systems, and how the structure of these systems may drive poor food security. We will also look at how poor food security can lead to poor nutrition, especially among young children, adolescents and the elderly. We will look at each of these components individually and as they interact. The approach we take to these topics will be equally applicable to students interested in high-resource settings like the US and to students interested in international humanitarian and development studies.
