Spring 2026 · NUTR ON234 · Tufts University · 3 credits · Undergraduate

This course examines the interconnected relationships between climate change, agriculture, and food policy, focusing on how these systems influence each other. Students will explore how climate change affects agricultural resources like soil, land and water, as well as how agricultural practices contribute to greenhouse gas emissions and environmental degradation. The course incorporates applied case studies from both small-scale agricultural systems and large-scale farming, providing real-world perspectives on challenges and solutions. Through these case studies and policy analysis, students will examine strategies for creating sustainable and climate-resilient food systems. Emphasis is placed on ethical and social considerations, including equity, food sovereignty, and the integration of indigenous knowledge. By applying theoretical concepts to practical applications by analyzing real-world data, students will develop critical thinking, problem solving, and policy analysis skills to design sustainable, climate-resilient food systems and address global food security challenges.
