Global Nutrition in Action: Bringing Together Food Systems, Culture, Policy, and Practice (PH-0233)

The course emphasizes comparative analysis between global regions, using France as a case study to examine food environments, food industry, school food systems, culturally embedded dietary practices, and planetary health. Students engage with local and cross-border food systems, analyze nutrition programs and policies, and assess how equity, traditions, and cost influence access to nutritious diets. Experiential components include site visits to international organizations, global food industry companies, and local and regional food system explorations led by communities.
