The Role of Food in Women, Girl, and Maternal Populations (PH-0298)

The purpose of this course is to provide students with an in-depth understanding of the complexities, issues, and solutions regarding the role of food as a social construct and its influence on the health outcomes for women, girls, and maternal populations. Case studies, videos, evidence- aligned, and evidence-based articles will be used to enhance learning. Students will be granted opportunities to apply critical strategies to develop solutions that align with identified needs of populations of interest. Students' success will be measured based upon their application of public health skills including: systems mapping, program evaluation, and policy analysis to thoroughly examine food policies and programs. Highlighted subject matters include dialogue centering: food insecurity and the US maternal health crisis, food deserts, the history of food in social and political movements, food accessibility, government programs including SNAP and WIC, school-based food programs, food culture among women and girls, and the application of Food as Medicine methodologies in health care delivery.
